So far today I have had an apple (90 cals) a big ol cup of coffee (90 cals worth of creamer) and a DELICIOUS bowl of tortilla soup that I made (I have no idea how many calories it is but I cant imagine that its much. It is super delicious and super easy, so Im going to tell you how to make it:)
-1 can of diced or whole tomatoes (15 oz can)
-1 can of enchilada sauce (10 oz can..2 cans if you want it thicker)
-1 can chopped green chilies (4 oz can)
-1 can corn (15 oz can)
-1 can reduced sodium/low fat chicken broth
-2 cups of water
-1 cooked chicken at Albertsons or Kroger that's already cooked so all you have to do is shred it and throw it in the pot. (like $5)
-1 package of taco seasoning and some chili powder for spice
-1 onion chopped
-1 clove of garlic chopped(or just a teaspoon from your jar of garlic)
-a dab of salt
-a dab of pepper
That's it! I doubled this recipe but just used one chicken and it was plenty of chicken. I froze the rest of the soup and am having some of it for lunch! I highly recommend it. Just stick in your crock pot on low or heat it up on the stove. You do need to have it simmer for a while so that the onions and garlic cook, but that's it!

I made it this weekend for our friends and it was soooooo GOOD! I added extra corn and a can of black beans to it. YUM YUM YUM! Looking forward to the leftovers for lunch today :-D
